Halloumi & Couscous Salad

This recipe came to our table many years ago, but recently resurfaced as our love for Halloumi Cheese was reignited by a trip to Milos, Greece. This light and fresh salad pairs perfectly with the saltiness of the cheese — allowing our bodies to feel cool and fresh in the warmer days ahead. A simple nod to sitting under the greek sun!

Ingredients —
1 cup small pearl couscous
1 cup water
¼ cup red onion
1 red pepper
1 block Halloumi
½ Cucumber
A handful arugula
Dressing —
½ Lemon
1 tbsp Olive Oil
1 tbsp Honey
A pinch of Salt
A pinch of Black Pepper
Instructions —
1. Bring water to a boil and pour in couscous. Immediately remove from heat and cover. Let rest for 5 minutes before fluffing.
2. Slice and sauté red onion and pepper for 5-8 minutes, or until softened. While cooking, bring a pan to medium heat. Once hot, place 1/4 inch slices of Halloumi on pan. Flip after 2-3 minutes or once they begin to have a caramel color. Cook on other slide for another 2 minutes before removing from heat. Note, if the pan is not hot prior to placing the cheese on the pan, it will likely stick to it
3. Slice cucumber and prepare dressing by combining the juice of half a lemon, olive oil, honey, salt and black pepper.
4. Plate your dish by combining the couscous, red onion, red pepper, and arugula in a medium sized bowl. Top with Halloumi and sliced cucumber. Drizzle your dressing on top and enjoy!
