Couscous Salad

Serves: 2 hungry gals

As the days get warmer, our bodies start to crave lighter salads that leave us feeling cool and refreshed. Packed with nutritious veggies and topped with some tasty Halloumi cheese, this easy and delicious mediterranean salad will have you feeling like your sitting under the sun on a Greek island!

Ingredients

  • 1 cup small pearl couscous
  • 1 cup water
  • ¼ cup red onion
  • 1 red pepper 
  • 1 block Halloumi 
  • ½ Cucumber 
  • A handful arugula

Dressing:

  • ½ Lemon
  • 1 tbsp Olive Oil
  • 1 tbsp Honey
  • A pinch of Salt
  • A pinch of Black Pepper

Instructions:

Bring water to a boil and pour in couscous. Immediately remove from heat and cover. Let rest for 5 minutes before fluffing.

Slice and saute red onion and pepper for 5-8 minutes, or until softened. While cooking, bring a pan to medium heat. Once hot, place 1/4 inch slices of Halloumi on pan. Flip after 2-3 minutes or once they begin to have a caramel color. Cook on other slide for another 2 minutes before removing from heat. Note, if the pan is not hot prior to placing the cheese on the pan, it will likely stick to it!

Slice cucumber and prepare dressing by combining the juice of half a lemon, olive oil, honey, salt and black pepper. 

Plate your dish by combining the couscous, redonion, red pepper, and arugula in a medium sized bowl. Top with Halloumi and sliced cucumber. Drizzle your dressing on top and enjoy!
